Indevin offers red winemaking services to clients for all red grape varieties. Services range from pre harvest to bottling preparation.
Red winemaking services include
- Pre harvest maturity analysis.
- Hand sorting.
- Crushing or whole bunch options.
- Open top fermenters.
- Temperature control on fermentation – warming or cooling.
- A choice of fermentation including inoculated, wild, tank, barrel and stave work.
- Extended maceration.
- Laboratory trial work.
- A choice of final filtration methods including cross flow.
All winemaking analysis and monitoring of stored wines is carried out by the onsite well equipped laboratory. Complete records and documentation for all wines are held on our specialist winery database, audited annually by an independent auditor.
Indevin established a new specialist, red winemaking facility for the 2005 harvest. The red cellar has been designed to facilitate the production of premium quality red wine through the use of 1.5 tonne flying hoppers with the elimination of the need to pump the must or fermented marc.
